Caramel Rice Pudding from Suzelle DIY

There is something so nostalgic about rice pudding! The creamy soft texture and delicious cinnamon flavours are so comforting. This recipe has a scrumptious caramel twist and it's so easy! D-I-Rice pudding? Because anybody can.

Ingredients

210 g Tastic Soft and Absorbing Long Grain White Rice

500 ml full cream milk

50g desiccated coconut

5 ml vanilla essence

2 ml salt

50 g castor sugar

1 can Caramel Treat

250 ml cream, whipped


To serve

Zest of 1 lime, grated

45 ml flaked almonds, toasted

Extra desiccated coconut

Caramel Rice Pudding from Suzelle DIY

  1. Place the Tastic Soft and Absorbing Long Grain White Rice into a pan with the milk, coconut, vanilla essence and salt and bring to the boil.
  2. Simmer while you keep stirring for 20 minutes.
  3. Stir in the castor sugar and cook until the rice is cooked and the mixture has reduced. Allow the rice to cool completely.
  4. Place the caramel treat into a mixing bowl and beat using an electric whisk. Stir in the rice mixture and fold through the whipped cream.
  5. Spoon the mixture into serving dishes or glasses and pop them into the fridge until serving.
  6. Serve your rice pudding topped with lime zest, toasted almonds and a sprinkle of desiccated coconut. Delicious!
