Chicken Stew & Vegetable Rice

Ingredients For Rice

30ml oil

1 tsp crushed garlic

1 cup Tastic Parboiled rice

2 cups chicken stock

1 tbsp Cajun Creole spice

1 cup mixed veg



Ingredients For Chicken

30mls oil

6 chicken pieces

2 tbsp tomato puree

1 red pepper, chopped

1 onion, chopped

2 tbsp instant chicken soup

1 tbsp of chicken spice

1 tbsp of Cajun-Creole spice

1 tsp dry thyme

4 cups chicken stock

Handful of cherry tomatoes (optional)

Handful of baby spinach (optional)


Vegan Sweet Potato Curry and Rice



For Rice

  1. Heat oil in a pot over medium heat.
  2. Add garlic and Tastic rice, cook for 2 minutes.
  3. Add 2 cups of chicken stock, Cajun spice and mixed vegetables.
  4. Leave to cook until the rice is soft


For Chicken Stew

  1. Heat oil in a pot and brown chicken pieces, remove and set aside.
  2. Add onion and red pepper and fry for 2 minutes.
  3. Add spices and herbs and fry for a further 1 minute.
  4. Return chicken to the pot, add 2 cups of chicken stock and tomato puree and leave to cook for 30 minutes.
  5. Mix soup powder with a little water to form a thick paste, add paste into stew.
  6. Add spinach and cherry tomatoes, then leave to cook for a further 10 minutes or until stew has thickened.
  7. Serve with a generous helping of the vegetable rice.
