Jardo With Tastic Rice


1 ¼ cups water

1 ¼ cups sugar

1/2 tsp rose essence

3 medium cinnamon sticks

1 tsp ground cardamom or to taste

5 whole cardamoms

60ml ghee (clarified butter)

1 cup Tastic Parboiled Rice, boiled with 1/4 tsp turmeric

1 small tin crushed pineapple

1 tbsp desiccated coconut

2 tbsp sultanas

Pinch of saffron steeped in 3 tsp boiled water

Pistachios sliced for decoration

Rosebuds for decoration

Jardo With Tastic Rice

  1. Boil the Tastic rice as per packet instructions with the turmeric until just fully cooked and the yellow colour has set in.
  2. Drain out the water and leave aside.

While The Rice Is Cooking

  1. In a pot, add sugar, water, rose essence, ground cardamom and boil slowly until it reaches a syrup-like consistency.
  2. It must not be too thick but as soon as the syrup begins to coat your spoon, it is done.
  3. Turn off heat.
  4. In a small pan, add ghee, cinnamon sticks, whole cardamom and bring to a simmer.
  5. Do not burn the spices.
  6. As soon as the aroma arises, toss into your syrup and stir.
  7. Add in your cooked Tastic rice and stir in.
  8. Add your pineapple and bring to simmer on medium heat to cook for approximately 10 minutes.
  9. Close to the end of cooking, add in your coconut, sultanas and saffron steeped in very little water.
  10. Close your lid and allow to steam on low heat until the water evaporates and the rice becomes sticky.
  11. Decorate with pistachios and rose buds or petals and enjoy hot.
