Lemon Rice from Suzelle DIY

Serves 6

Easy peasy


Gluten free


2 cups cooked Tastic Long Grain Parboiled Rice (follow the instructions on the packet, people)

1 tbsp sunflower or canola oil 1 tsp mustard seeds

10 - 12 curry leaves fresh or frozen, whole or chopped

1 tsp turmeric

1 tsp red chili flakes

2 - 3 tbsp toasted cashews or peanuts (optional)

2 tbsp or more lemon juice

Fresh coriander leaves for garnishing

Lemon Rice from Suzelle DIY

  1. Heat the oil in a pan over a medium heat. When the oil is hot, add the mustard seeds and let them pop. Add your curry leaves, turmeric, red chilli flakes and mix it all together in the pan.
  2. Reduce the heat to medium low and add in your nuts.
  3. Add a splash of water to reduce the temperature of the pan, then add the lemon juice.
  4. Add the rice to the pan, mix together with the spices and cook for a further 2 minutes or until the rice is heated through.
  5. Take off heat and add salt and more lemon juice to taste.
  6. Let it sit for 2 minutes before serving and garnish with fresh coriander. And there you have it. Fresh, zesty and delicious!
