Poke Bowl from Suzelle DIY

Poke bowls are very trendy at the moment but you don’t have to be intimidated to make them yourself! I like to use Tastic Wholegrain Long Grain Brown Rice and you can add in whatever ingredients you like! Use your creativity with these fresh and healthy sushi bowls.

Ingredients

1 cup Tastic Wholegrain Long Grain Brown Rice

1 firm block tofu, cubed (350 g)

1 small mango, cubed

1 ½ tbsp pickled ginger, finely chopped

½ can whole kernel corn (±200 g)

1 ½ avocado, cubed

1 cup cabbage, shredded

1 cup carrots, grated

1 cup edamame beans, shelled and cooked al dente

½ cup radishes, thinly sliced

2 tbsp black sesame seeds

2 tbsp white sesame seeds

Freshly sliced chilli and coriander to garnish


Dressing

2 spring onions, finely chopped

1 tsp fresh ginger, grated

½ cup rice wine vinegar

½ soya sauce

2 tsp mirin (or 2 tsp sugar)


Poke Bowl from Suzelle DIY

  1. Preheat your oven to 180°C.
  2. Cook the rice according to the packet instructions.
  3. Prepare your dressing by mixing all the ingredients in a jar and giving it a shake.
  4. Soak your tofu pieces in your dressing like a marinade for 10 minutes. Place on baking paper on a baking tray and bake in the oven for 20 - 30 minutes (or until they start to get crispy).
  5. Now build your poke bowl by layering your cooked rice, baked tofu, edamame beans, and crunchy fresh fruit and veggies. Add your dressing and serve!
  6. PS: It looks prettier when all the ingredients are layered separately. Better yet, have a build-your-own poke party!

Tips and tricks

  1. It's better to use a sweetened rice wine vinegar. If you can't find it, you can add some sugar to sweeten your dressing.
  2. I love tofu! But you can substitute it for any other protein that you like! You can try seared tuna, smoked salmon or even some crunchy baked chickpeas.
