Bursting with Yum Baked Eggs

BURSTING WITH YUM BAKED EGGS

Tastic Parmesan and Saffron Flavoured Rice

2 Eggs

4 Rashers bacon

125ml Tomato puree

Handful of basil

Chives

Salt & pepper

BURSTING WITH YUM BAKED EGGS

  1. Prepare the rice as per the packet instructions
  2. Preheat the oven 180°C
  3. Season with salt and pepper and add 2 chopped basil leaves and the tomato puree
  4. Spoon into ramekins, making a well in the centre
  5. Crack an egg into each ramekin
  6. Bake for 15-20 minutes or until the egg is cooked
  7. Place the bacon on an oiled baking sheet and grill to taste
  8. Chop up the bacon
  9. To serve, top the baked egg rice ramekin with chopped bacon and fresh basil leaves.
