Tastic Parmesan and Saffron Flavoured Rice

2 Eggs

4 Rashers bacon

125ml Tomato puree

Handful of basil

Chives

Salt & pepper

BURSTING WITH YUM BAKED EGGS

  1. Prepare the rice as per the packet instructions
  2. Preheat the oven 180C
  3. Season with salt and pepper and add 2 chopped basil leaves and the tomato puree
  4. Spoon into ramekins, making a well in the centre
  5. Crack an egg into each ramekin “well”
  6. Bake for 15-20minutes or until the egg is cooked
  7. Place the bacon on a oil baking sheet and grill to taste
  8. Chop up the bacon
  9. To serve, top the baked egg rice ramekin with chopped bacon and fresh basil leaves.
