DOABLE AND DELISH LAMB SALAD

Tastic Moroccan Spice and Sweetcorn Flavoured Rice

250ml Slow roasted lamb

15ml Mint, chopped

80ml Yogurt

Fresh coriander

45ml Pomegranate seeds

Salt & pepper


FOR THE LAMB

1 Lamb roast (2-2,5kg)

15ml Cumin

30ml Brown sugar/ honey

15ml Coriander

15ml Five spice

30ml Olive oil

DOABLE AND DELISH LAMB SALAD

  1. Rub the lamb with the all the marinade ingredients
  2. Place in a roasting tray and cover with foil
  3. Cook in a 100C oven for 2-2,5 hours
  4. Once cooked, pull the meat off the bone with 2 forks
  5. Prepare the rice as per the packet instruction
  6. Mix together the yogurt and mint. Season to taste.
  7. Toss the rice with the lamb
  8. Spoon over the minted yogurt
  9. Sprinkle with pomegranate seeds and garnish with fresh coriander
