Garlicky Chicken Meatballs

GARLICKY CHICKEN MEATBALLS

500g chicken mince

100g cooked Tastic Parboiled Rice

1 egg, beaten

3 garlic cloves, crushed

3ml cayenne pepper

20g parsley

10g mint

salt and black pepper

To cook: 15ml oil


MEDITERRANEAN VEGETABLE BAKE

500g assorted vegetables, such as, red onion, peppers, brinjal, pumpkin, baby marrow, patty pans, cut into even-sized pieces

30ml olive oil

salt and pepper

1 can tomato and onion mix

60ml tomato purée

45ml chutney

15ml tomato paste or sundried tomato pesto

fresh basil leaves, to serve


To Serve:

210g Tastic Parboiled Rice

10g fresh parsley, optional

GARLICKY CHICKEN MEATBALLS

  1. Combine all of the ingredients into a mixing bowl and mix well.
  2. Shape spoonfuls of the mixture, using floured hands, into meatballs. Place in the fridge for 30 minutes to firm up.
  3. Heat the oil in a pan and fry the meatballs for 2-3 minutes, per side, or until golden. Set aside.

MEDITERRANEAN VEGETABLE BAKE

  1. Preheat the oven to 180°C.
  2. Place the vegetables into an ovenproof casserole and drizzle the olive oil over them. Season with salt and pepper. Bake for 20 minutes.
  3. Stir in the tomato and onion mix, tomato purée, chutney and tomato paste.
  4. Top the vegetable bake with the meatballs, cover and bake for 15-20 minutes, or until the vegetables and meatballs are cooked.
  5. Garnish with basil leaves.
  6. Serve with the Tastic Parboiled Rice and parsley.
