Summer Rice Salad


1 cup Tastic Wholegrain Long Grain Brown Rice

1 big red pepper, diced

1 cup black olives

Handful dill, chopped

250g gooseberries, halved

Handful micro leaves

2 tbsp olive oil

2 tbsp lemon juice

2 tbsp balsamic vinegar

Salt & pepper

Summer Rice Salad

  1. Cook the Tastic rice in a pot of boiling, salted water, following packet directions, until cooked.
  2. Drain the remaining water.
  3. Rinse under cold water and drain again.
  4. Leave to cool completely.
  5. Combine the cooked rice, pepper, olives, dill, gooseberries and micro leaves in a bowl.
  6. Place the olive oil, lemon juice and vinegar in a cup. Season with salt and pepper. Stir to combine.
  7. Pour the mixture over the rice.
  8. Toss to combine.
