Veg Stuffed Braai’ed Snoek With Rice

Ingredients

1.5 kg Snoek

1 cup cooked Tastic Parboiled Rice

2 tsp lemon and herb spice

1 tsp mixed herbs spice

1 tsp garlic, minced

1/2 small red onion, chopped

1/2 red and yellow pepper, chopped

1 cup spinach, chopped

1 punnet of mushrooms

Oil for frying


Veg Stuffed Braai’ed Snoek With Rice

  1. Cook the Tastic rice as per instructions on the bag.
  2. Heat the oil in a pan over medium heat and fry the onion, peppers and garlic.
  3. Cook for 5 minutes until soft.
  4. Add the mushrooms and spinach and saute until the spinach is wilted and cooked.
  5. Season with herbs and spices.
  6. Add the cooked rice and combine well.
  7. Use the rice mixture to generously stuff the fish by opening it up and filling it with the rice mixture.
  8. Wrap the whole fish in tin foil.
  9. Cook on hot coals for 15 min on each side (could also be baked in 180 degrees Celcius oven for 20-25 minutes)
  10. Serve with ujeqe, salad and chakalaka
